A drug-addict who cut off a father-of-two's penis and dismembered his corpse after brutally stabbing him to death in a western Sydney unit has been sentenced to at least 22 years in jail.

Goran Stevanovic's family quietly and solemnly sobbed in the back of the NSW Supreme Court on Thursday as Khanh Xuan Pham was jailed for the bizarre murder.

Pham, 40, did not flinch as he was jailed, with Judge Helen Wilson saying it was "not explained" why he mutilated Mr Stevanovic's genitalia.

After stabbing the 40-year-old to death inside his Sadlier apartment in January 2019, Pham dismembered and mutilated Mr Stevanovic's body over several days.

The court heard that because the body had been mutilated, his family - due to their religious beliefs - were unable to perform funeral rites or see him before he was buried.

"I am traumatised the way this killer has murdered our son, I will never forgive him because he has never shown any remorse," Mr Stevanovic's father said outside court.

"He did have a long life ahead of him, but Mr Khanh, he took his life, he had no right to do that."

Mr Stevanovic's decomposing body was eventually found by Pham's mother, who had come to her son's apartment to check on his welfare, clean and bring him food.

When she noticed a strange smell coming from the bathroom, she peered inside and made the grisly discovery of a pile of body parts in the shower.

She had initially believed she had found her son's body, much to her horror.

"This crime is indeed a grave one, a savage attack by the offender with a weapon on an unarmed man … treating his body with complete contempt which denied Mr Stevanovic his humanity or any dignity in death," Judge Wilson said.

Judge Wilson said that because of their religious beliefs, Mr Stevanovic's family were even unable to see his body to give him "one last hug" before he was put to rest.

She added that the impact on Mr Stevanovic's two young children was as "incomprehensible as it was immeasurable."

Mr Stevanovic was killed by four stab wounds to his back, chest and heart.

The kitchen knife which Pham used to stab him to death snapped off on his spine and became lodged in his back.

The murder occurred after Mr Stevanovic arranged to go to Mr Pham's home to purchase methamphetamine on January 8, 2019.

At the time, both Mr Pham and his girlfriend Kate Lloyd were present inside the apartment.

While Lloyd was in bed asleep, Pham stabbed Mr Stevanovic while he had his back turned, with the court previously hearing he had said nothing threatening towards Pham.

Mr Stevanovic managed to stumble out of the apartment however, Pham set upon him again before he and Lloyd carried his body back into the apartment.

Over several days, Pham attempted to cut Mr Stevanovic's body up into pieces in order to dispose of it, however abandoned those efforts.

When his body was discovered, pliers, a meat cleaver, knife sharpener, cable ties, several knives and plastic bags were found in the shower recess.

He also stole Mr Stevanovic's mobile phone, wallet and car.

Judge Wilson said the mutilation of his body added to the seriousness of the crime.

Pham pleaded not guilty to murder, but offered to plead guilty to manslaughter at trial, with his defence arguing he was drug-affected at the time and suffering a paranoid episode.

He was found guilty of murder following a judge-alone trial.

But Pham gave several differing versions of events to police, which were filled with contradictions.

Judge Wilson said his expressions of remorse were "rather hollow and dwarfed by sorrow for his own situation."

"Precisely why he did it will probably remain unknown," Judge Wilson said.

"It may be that his drug induced paranoia had some role to play."

Pham was sentenced to 30 years and 7 months with a non-parole period of 22 years and 11 months.

With time served, he will be eligible for release in December 2041.

In May last year, Lloyd was jailed after she pleaded guilty to being an accessory after the fact to murder.

Lloyd was sentenced to a five-year, three-month prison term with a non-parole period of three years and six months.
